1. Season strips with salt and cracked pepper. Heat saute pan, add 1 T. butter and shallots. Sear steaks on both sides, about four minutes each. Set aside.
2. Remove shells from lobster. Season lobster with Old Bay Seasoning. In a separate pan, add remaining butter. Sear lobster tail about 6 minutes. Reduce pan with champagne, whisk in chilled butter and lemon juice. Season with salt and pink peppercorns. Reduce sauce, add fresh tarragon and parsley, pour over lobster and serve with KC Strips.
