1. Place butter in a mixing bowl and add all ingredients.2. Mix for a few minutes.3. Divide onto parchment paper and roll up like a log.4. Wrap tightly and freeze until firm.5. Season and rub steaks with garlic, salt and pepper.6. Grill or pan fry t-bones to desired temperature.7. Place a slice of the barbecue butter on the top of the steak right before serving.
Chef Jasper’s Notes: My friend BBQ Queen and cookbook author Karen Adler taught me the art of preparing compound butters a few years back and I love to use on steaks as the perfect finish right before serving. Be creative and add green onions or various minced vegetables to the butter along with your favorite spices.
