Grilled T-bones & Bbq Butter

  • Ingredients
  • 1/4 lb. unsalted butter
  • 1 tsp. garlic, minced
  • 3/4 tsp. BBQ spice
  • 2 Certified Hereford Beef t-bone steaks
  • 2 cloves garlic

1. Place butter in a mixing bowl and add all ingredients.
2. Mix for a few minutes.
3. Divide onto parchment paper and roll up like a log.
4. Wrap tightly and freeze until firm.
5. Season and rub steaks with garlic, salt and pepper.
6. Grill or pan fry t-bones to desired temperature.
7. Place a slice of the barbecue butter on the top of the steak right before serving.

Chef Jasper’s Notes:
My friend BBQ Queen and cookbook author Karen Adler taught me the art of preparing compound butters a few years back and I love to use on steaks as the perfect finish right before serving. Be creative and add green onions or various minced vegetables to the butter along with your favorite spices.
