Banana Bread Pancakes

  • 3/4 cup All purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup overripe banana; mashed
  • 1/4 cup buttermilk
  • 1/4 cup sugar
  • 4 tablespoons unsalted butter; melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • sliced bananas
  • pecans; chopped, toasted
1. Whisk together flour, baking soda, and salt in a large bowl.
2. In a separate bowl, whisk together mashed bananas, buttermilk, sugar, butter, egg and vanilla.
3. Add wet mixture to dry mixture; stir just until combined.
4. Heat an electric griddle to 375 degrees or a nonstick skillet over medium-low; coat with nonstick spray.
5. Drop batter by 2 Tbsp onto griddle and cook until bubbles appear and bottoms are browned; about 4 minutes.
6. Flip and cook until brown; about 2 minutes more.
7. Serve with syrup, sliced bananas and chopped toasted pecans.
