North Croatian boiled potatoes

  • 300 grams (10.6 oz) Baby new potatoes
  • 40 grams (3 T) Butter
  • 10 grams (1/3 cup) Fresh parsley chopped
  • 5 grams (1 tsp) Salt
Gently peal potato skin, and if possible just “shave” it. Boil the potatoes for about 25-30 minutes (until toothpick can easily go through). Drain potatoes. In another pot put butter and finely minced parsley leaves. When butter starts to foam, add potatoes and fry it in butter 1-2 minutes. Serve hot with salt.
