Goat Cheese Mashed Potatoes

  • 4 medium Potatoes; (Peeled and Diced)
  • 2 1/2 tablespoons Kosher Salt
  • 2 tablespoons Butter
  • 2 tablespoons Herb and Garlic Chevre; (up to 3), (Spreadable)
  • 2 tablespoons Sour Cream
  • 1 teaspoon Adobo
  • Fresh Black Pepper; to taste
Boil diced potatoes and add kosher salt to the water; boil until fork tender.

Drain and add butter, adobo, and pepper. Mash well.

Add Chevre and sour cream, combine well and add pepper to taste.
