Rum Rum Chicken
2 pounds Hen House split chicken breast (cut into pieces)
1 cup dark rum
1/3 freshly squeezed orange juice
1 tablespoon orange zest
1 tablespoon grated ginger
1/3 cup soy sauce
2 tablespoons brown sugar
1 tablespoon chopped garlic
½ tablespoon chopped fresh mint
Place rum, orange juice, orange zest, ginger, soy sauce, brown sugar, garlic, and mint into a large bowl. Combine with whisk and add chicken pieces. Cover and marinate up to 4 hours. Pre-heat grill and cook chicken over medium heat for about 10 to 12 minutes on each side, basting occasionally.
Jasper's Notes: This is a dish that is not only easy but great for a hot summer night! Start dinner with an authentic mojito, fire up the BBQ grill, make a nice mozzarella and tomato salad, sit back, relax, and enjoy the evening!
