Balsamic Rosemary Chicken
2 lb. mixed fresh Hen House Chicken Pieces (thighs, breasts, wings, and legs)
1 onion (cut into julienne strips)
1 fresh orange peeled and quartered
4 Sprigs fresh rosemary
1 cup balsamic Vinegar
1/2 cup brown sugar
6 - 8 dried figs, quartered
1/8 teaspoon salt
1/4 cup melted butter
Rinse and pat dry chicken pieces. Set oven to 400°. In a large roasting pan, pour the balsamic vinegar in the bottom. Add brown sugar and butter. Add fresh orange and onion. Add chicken pieces and sprinkle with salt and fresh rosemary.Toss chicken to coat with sauce. Add dried figs, roast in oven 45 minutes until golden.
To serve, place chicken on warm platter or dish, use balsamic glaze from bottom of roasting pan and drizzle on top of chicken.
