Apple Butter Glazed Hereford Beef Brisket
4 pound Hen House Hereford Beef Brisket
1 onion, quartered
2 clove garlic cut in half
1 oz Louisburg Cider Spice
water
Apple Butter Sauce
16 ounces Louisburg Cider Mill Apple Butter
1/2 cup Louisburg Apple Cider
2 Tbs. scallions, minced
3 Tbs. brown mustard
1 teasp. salt
In an 8-quart pot, combine brisket, onion, garlic, and cider spice. Add enough water to cover meat. Bring to a boil and simmer until meat is tender, about 2 1/2 hours. Remove brisket from pot.
SAUCE: While meat is cooking, combine apple butter, apple cider, scallions, mustard and salt in a 2-quart saucepan. Heat until apple butter melts, stirring occasionally.
Preheat oven to 325 F. Place brisket in a roasting pan and brush with apple butter sauce. Roast uncovered 30 minutes until meat is heated through. Baste 2 or 3 times during roasting.
