1. In a mixing bowl, combine wasabi, mayonnaise, soy sauce, ginger, green onion, sriracha and watermelon juice.
2. Add tuna, watermelon and avocado.
3. Toss and sprinkle with toasted sesame seeds.
4. Serve on a chilled platter with rice crackers.
Chef Jasper’s Notes: The Poke phenomenon is astonishing. This easy marinated tuna dish has become a favorite around the country. Here’s a great summer recipe with the addition of watermelon that makes for a good clean finish. I like to add a little bit of wasabi for more flavor.
