1. Combine tuna, mayonnaise, olive oil, capers, lemon juice,
cracked pepper and sea salt in a food processor and make
a purée. Place in a container and put in the refrigerator for
one hour.2. Slice tomatoes and place tuna purée on top.3. Finish with cracked pepper, lemon slices and capers as
Chef Jasper’s Notes:One of my favorite sauces is the
famous chilled Tonnata sauce that is served in Italy. Seriously,
this dish tastes like a tuna sandwich. Absolutely delicious.
The sauce is also very versatile and you can use on sliced
veal or pork slices. It’s summertime and now is the time to
enjoy the wonderful local heirloom tomatoes. Many thanks
